Sweet kolkattey


Hello All,

After a long time, i am stepping in..Here is the recipe of Sweet kolkattey(Avi Kadubu). It is a traditional South Indian sweet. It is nothing but steamed Kadubu.

Ingedients:

Coconut
Jaggery
Elachi powder
Rice flour
Maida
Salt
Ghee
 
1.       For Hoorna:
Fry coconut 1 measure and 3/4th measure Jaggery with 1 spoon water.
Add elachi powder
Keep stirring until the water gets evaporated and it will start becoming solid. Switch off the flame and allow it to cool fully
2.       For Dough:
Boil 1 ¼ measure of water in a kadai
Add 1 spoon ghee and little salt
Add 1 measure rice flour and 2 spoons maida flour.
Simmer it and just close it. Don't stir. Leave it on for 3 to 5 minutes
Turn off the flame and mix well.
It will be hot, dipping your hand in cold water, take big balls of matter and knead it well on a slab, over and over until it forms a smooth ball.
3.       Now take a small ball, roll out. Place hoorna in the middle.
4.       Taking water in tip of the fingers, apply around the rim/border of the dough. Now fold and press. Water will bind and seal
5.       Like wise make few more doughs. Steam it in cooker, just like idly. No weight must be kept
Serve hot with Ghee
